What is Blueline Tilefish aka Gray Tilefish?
Blueline Tilefish (also known as Gray Tilefish) is a bottom-dwelling species that is commonly found in the western Atlantic from Virginia to the Campeche Banks of Mexico. They are fairly large fish, growing up to 35 inches long, with the males generally reaching greater lengths than the females. Furthermore, both sexes have elongated dorsal and anal fins that measure more than half their body length and an overall olive-gray tone with a white underbelly. Their name derives from the narrow gold stripe underlined in blue running from the tip of their elongated snout to the tip of their eye.
They generally share the same habitat as snappers and groupers, in other words, irregular bottoms with sand, mud, and shell hash. Spawning occurs year-round mostly during the evening hours, though peak spawning takes place in May, with females able to produce over 4 million free-floating eggs.

Blueline Tilefish contains firm, white meat that can be made into a delicious fillet with a mild sweet flavor similar to crab or lobster. One of our favorite recipes here at Wild Seafood Co. is Crispy Tilefish with Ponzu Butter which can be completed in two easy steps. To begin, you’ll want to pat your fillets dry with a paper towel and season the flesh side with salt. Next, you need to heat vegetable and olive oil in a large skillet over high and place the fillets inside, skin down, and reduce to medium heat. Now you simply leave to cook for around 6 to 7 minutes then turn your fillets and cook for an additional 3 to 4 minutes. After this you can plate your prepared fish and add mushrooms to your skillet, cooking until they’re lightly brown. Last but not least is to bring your Yuzu Ponzu to a boil then remove from the heat, whisk in butter, and serve with your prepared fish and mushrooms.
